Here's the one I'm using at the minute:
It's based off Poptisse's UI, and I'm trying to keep it as clear as possible, some keybound abilities (Flash Heal, Greater Heal, PoM, Renew, CoH, PoH etc) are on hidden bars to try and free some space up.
Using BigWigs for bossmods, Pitbull for unitframes, Grid for raid frames (with Clique to cast on them and a few Grid plugins), Dominoes for action bars, TipTap for tooltips, MSBT for combat text, SexyMap for the minimap, OmniCC for cooldowns, Quartz for castbars, SBF for buffs, kgPanels for the boxing and RedRange for... range.
Any tips welcome! o/

OK, about time another clicker posted their UI.....
A little explanation of whats what....
Top left is my frame with my pet and pet target below and then focus and focus target below that. Over to the right is my target with target's target, the number to the left is the range and the gap above the target's target is where the target's cast bar appears
Further to the right is a set of buttons to misdirect to specific tanks and then my tank list with targets
Towards the middle of the screen I have seperated out my boss timers to draw attention to iminent events but to still give an overview. The set of buttons in th emiddle are my clicking buttons  to the right of them is my target debuff timers
Moving down you can see sexycooldown which tracks my gears' internal c/d of procs - to the left are my debuffs so they are nice and clear. the icon over my map tracks herkuml trinket stacks and the timer so I can see when to refresh it
The grey bar is my autoshot timer which sits above my cast bar had I actually took the s/s whilst I was casting something!!
Thats my layout anyway....

Nice UI there Lee, neat and organised. I wouldn't gave bats on the middle because i'm not a clicker :p but let's not start that debate again. You tend to pen the meters anyway  And yay for pitbull :p

I only use Skada for the Dmg/Dps meter function, I've had issues with the threatmeter on it.. not being accurate etc hence why I've got Omen

Hi,
Merlin reminded me that I could post my interface on the website, so here in all it's shame is the healing interface I use on Nellf.
Due to having worked with user interfaces in my previous job, I've got a tendency to tailor interfaces to my liking. I have to point out, that there is a lot of useless stuff on my screen still: I could lose most of those buttons without a care in the world. They're useless - I don't even look down there anymore, so why should I display them. Scrolling combat text isn't what it's cracked up to be for healing, I mean big numbers are purdy, but I can follow all the raid healing via grid. My buffs could just be cascaded or displayed better With EBB (Elkano's Buff Bars). I've separated my chat into two, the other of which displays utter garbage most of the time and could be hidden during combat.
Basically what I'd like to achieve is simplicity in my interface. Losing all the distracting and honestly most of the time pointless doodads and whatnots, and focusing on the key ingredients: Grid, Cooldowns, BossMod alerts and timers, my frame, my target frame and my focusframe. The chat if not on ventrilo. I've still got a lot to do, and even more so before my interface becomes aesthetic.
Some people might question the position of my "raid healing ui" but it's in place for a reason. It's the least amount of eye movement and mouse movement necessary to achieve quality healing. I can focus on the game field, and see my character, fires etc. and still be able to have the health of the raid and my focus in my eye at the same time. Sure it covers up a part of the screen, but due to my normally quite dramatic view distance that's never been a problem.
Using clique in conjunction with grid I've managed to eliminate the need for extra selections or mouseover macros (however I'm planning to add a few mousover macros to cover my NS+HT, Castseuqence 5+1 and Trinket macros), and can heal with one hand while moving with the other.
Lately I've noticed the importance of dash when changing position in some raid encounters, and it's helped me save someones ass more than once, so I'm thinking of adding a dash cooldown display somewhere, not as prominent as my mostly used, but enough so to that I can quickly glance at where it's at.

Okay since the forum utility apparently totally raped my image-quality rendering my descriptions somewhat useless, here are quick recaps of what's written in the image.
- I heal with a seven button mouse using clique and grid. Seven buttons with shift and alt leave no more configurations to be desired.
- My Grid is set to display incoming health, health deficit, my regrowth, my rejuvenation, my lifebloom age & stacks, my wild growth, poison and curse debuffs, aggro, range and MT.
- I use bartender 4 for my bars, most of which are useless. My most important bar is just in place to display cooldowns of the five most important cooldowned abilities I have.
- I use pitbull 3 for my unitframes with custom dogtag tags to display various other data about the units (including talentpoints on unitframes).
Edit 2:
OmniCC for cooldowns, Quartz for castbars.
